If you like hush puppies and German food, you’ll probably love our sauerkraut balls. The deep-fried balls of dough and pickled cabbage are a main attraction at Blessed Sacrament’s annual Octoberfest. If you get a hankerin’ for them and it’s not festival time, here’s the recipe so you can get your fix until next festival
Sauerkraut Balls
We’ve pared down this recipe from Blessed Sacrament’s men’s group to make about 75 balls – a fraction of the thousands they will cook.
Preheat oven to 400 degrees.
3 1/3 cups Bisquick
2 eggs
1 cup of milk
1 teaspoon pepper
1 teaspoon salt
1 teaspoon chopped fresh parsley
2 cans (12 oz. each) sauerkraut, drained
1 cup chopped bacon
2 teaspoons minced garlic
1 medium onion, finely chopped
Beer (if mixture seems dry)
Combine all ingredients. Scoop tablespoons of batter onto a cookie sheet and bake at 400 degrees for 5 minutes, until slightly firm. Remove from oven and roll into balls. Freeze until ready to use. Partially thaw balls before frying. To cook, heat vegetable oil in cooker and fry balls in small batches.
